I spent a decade in landscape architecture, taking ideas from concept through production. Pink Bird comes from the same instinct: pay attention to how something looks, feels, and works.

Salt is used every day, yet most of it is packaged to disappear into a cabinet. I wanted better salt, a better way to use it, and bottles that could stay within reach.

Pink Bird is two salts from Trapani, each with a clear job. One for cooking. One for finishing.

Our salt begins in the shallow coastal pans of Trapani, where seawater is guided inland and left to the Sicilian sun and wind.

Seawater moves through a series of shallow clay-bottomed pans. With each stage, the sun and wind pull away more water, concentrating the brine until salt begins to crystallize.

Nothing happens on a fixed schedule. Salt makers read the weather, the water, and the crystals, harvesting each pan only when it is ready.

the bird belongs to the story.

Flamingos feed in Trapani’s salt pans. That living landscape is where our salt comes from, and where Pink Bird gets its name. A small connection to the coast, every time you reach for the bottle.

Where a crystal forms changes how you use it.

01Coarse cooking salt

Crystals build on the pond floor

Sun and wind evaporate seawater until it becomes concentrated brine. In the crystallization ponds, salt builds into a layer that is ready to harvest.

Those coarse crystals become the salt you reach for while cooking. Add them to pasta water or season vegetables before roasting, giving them time to dissolve into the dish.

A delicate veil forms at the surface

Fior di sale begins as a delicate veil of crystals on the surface of the salt ponds. Salt makers collect it by hand while it floats on the water.

Its fragile texture is the reason to save it for the end. Sprinkle a pinch over tomatoes, grilled vegetables, or a finished plate, where its delicate crunch can stay with the food.
