good to know.
About the salt, the bottles, and what’s coming next.
the salt & the bottles.
Why two salts?
They do different jobs. Use coarse cooking salt in pasta water, on vegetables before roasting, or as you cook. Add fior di sale just before serving for a delicate finishing texture. See them in use.
Where does the salt come from?
Both salts come from Trapani, on the western coast of Sicily. Seawater evaporates in coastal salt pans under the sun and wind.
How are the two salts made?
Cooking salt crystallizes as concentrated seawater evaporates in the salt ponds. Fior di sale forms a delicate layer at the surface and is collected by hand. Their different textures make one suited to cooking and the other to the final pinch.

Can I buy a bottle on its own?
Individual cooking bottles and finishing jars are coming soon. You can see the individual products here.
When can I buy refills?
Refill cartons are coming soon. The cooking carton contains 500 g and the finishing carton contains 250 g, matching their bottles. Ask about the launch.
Why the name Pink Bird?
Flamingos feed in the salt pans of Trapani. They were part of this landscape long before Pink Bird had a name.
